Savory Corona or Gigante Beans
Ingredients:
1lb Beans
1lg white onion
1lg carrot
1rib celery
1 bay leaf
8c Stock/water
Red wine vinegar
Salt
Pepper
Herbs to taste. fresh or dried (we'll be using fresh parsley. Oregano, Thyme, Herbs de Provence, etc are also options)
Salted pork (optional)
Begin by soaking beans overnight in a container large enough to cover the beans generously with water; you will be surprised how much water is absorbed.
When you are ready to cook your beans, strain the beans from the soaking water and put in a large pot with all other ingredients.
Cook over medium heat until the liquid begins to boil. Turn heat down to a slow simmer.
After about 45 min, test several beans for doneness. If they are still crunchy, cook for another 10-15 min.
Once beans are cooked to your liking, remove from heat and season with salt and pepper to taste.
So many options and variations with this basic recipe.
Cooking options: slow cooker, Instapot, stovetop, oven.
Could be a stand-alone dish with a tomato sauce and other veggies. Could be a side dish for a braised meat or grilled fish.
Strain some of the hot beans immediately into a vinaigrette for some delicious marinated beans that are delicious cold/room temp
